A REFRESH PINEAPPLE CUP
One of the desserts that are most often on my table and one of the most requested by mine, is today’s dessert “Glass of refreshing pineapple.”
it a few years ago in a restaurant and when I ate this dessert I was really surprised because it was delicious so, later, I asked to the owner, a very kind lady if she would give me the recipe for this dessert and now I share with you. In addition to being beautiful at the table it is simple to prepare and you will be able to enjoy it all year, since being refreshing and serving cold, you feel like it both in summer and winter and feel great!
- 500 gr. Pineapple in syrup (Reserve syrup)
- 400 gr. of whipped cream
- Lemon juice drops and a pinch of lemon zest
- Liquid candy
Cut the pineapple into small pieces and put it in the blender glass along with a few drops of lemon juice and a pinch of zest. Once well crushed we check the texture and we add a bit of pineapple syrup, until we have a mixture that is neither too clear nor too thick. Finally and to make it very thin we pass it through a sieve or strainer of fine mesh.
Spread the pineapple mixture in a dessert or cocktail glasses, about 3/4 parts (a little more than half) and with a pastry bag we spread the whipped cream on the pineapple. (Failing that, it helps if we cut the corner of a plastic bag suitable for food.) And now, we put the glasses inside the refrigerator.
We will take them out very cold and just at the moment of serving, drop the liquid caramel in thin threads on the cream and ready to serve, right how easy? It only remains to enjoy it!
TIP: Use whipped cream if possible, the quality shows! but in the case of not having and using cream in espay remember that this volume drops very easily so you would have to arrange it on the pineapple at the same time as the caramel, that is, just before serving. Another option equally rich but healthier is with natural pineapple and its juice, I love it!
