Pudding is an example of how to make a delicious dessert with very common ingredients in our kitchen, simple to prepare and also economical. And today’s coconut pudding is a delight that will soon be very common at your table. Let’s go with the recipe!
- 100 gr. Grated Dehydrated Coconut
- 4 eggs
- 2 yolks
- 8 type “Maria” cookies
- 370 gr. Condensed milk
- 200 ml milk
- 100 gr. of Sugar (For caramel)
- 3 tablespoons of water (for caramel)
Preheat the oven to 175º up and down.
To prepare the liquid caramel, mix in a saucepan 100 grams of sugar with the 3 tablespoons of water until you get a golden caramel. Pour it into an elongated mold and move it to cover the entire bottom.
In a large and big glass where we can beat, we will put the broken cookies, coconut, eggs, milk, condensed milk and beat until you get a fine cream.
Pour the mixture into the caramelized mold and place it inside a larger source, pour hot water halfway to the source and put it in the oven at 170º for 45 minutes.
Take it out of the oven and when it is warm we will put it in the fridge (leave it the night before.) So that until the moment of serving it is very cold. To unmold we will pass a knife around the edges and turn it over a fountain. And enjoy it!
* If you fancy the same as me for Valentine’s Day, cut a wide piece of pudding and with a heart-shaped mold you shape it. You serve it by placing the heart on the pudding or on the plate on another cut.
TIP: So that the liquid caramel does not solidify and can easily move it throughout the mold, add a few drops of lemon together with the water and sugar.
